Recipe: The Goat Island Baguette
Meal planning for summer weekends and days spent at the lake can sometimes become "old". I have my "go-to" meals and appetizers for lake days and let me be real honest and stay they need some spicing up! I am happily adding this one to the lineup.
I prepared it 3 ways and this was the "winner" of our recent taste test session. It was light and easy to throw together after coming off the water while you are waiting to fire up the grill.
Ingredient List:
- 1 fresh baguette
- goat cheese
- cherry tomatos
- fresh bacon bits
- fresh ground pepper
- olive oil (1/4 of a cup)
- lemon pepper
- garlic salt
Steps:
- Slice your baguette and place on a pan for roasting in the oven. Pre-heat your oven to 350.
- Mix together the olive oil, a dash of garlic salt & lemon pepper. Spread it onto the baguette.
- Next spread the goat cheese as if its jelly onto the baguette.
- Slice your cherry tomatoes as you prefer and add to the top of the goat cheese.
- Prepare your bacon and crumble on top followed by fresh ground pepper.
- Bake at 350 for 7-9 minutes. and serve!
