Recipe: Buffalo Chicken Bites
There are so many reasons to love fall. With that said, let me be clear and say I will miss summer, but cozy sweatshirts, cooler weather, the changing of the leaves, making our favorite soups, and of course football! While Saturdays may look a little different on Smith Lake as the temperature changes, one thing still remains -- we have to eat! These Buffalo Chicken Bites are great for lakeside gatherings while you watch your favorite team play and they also go nicely in a plastic container as a mess-free appetizer to enjoy on a fall cruise around the lake!
Buffalo Chicken Bites
Ingredients
- 2 cups cooked chicken breast shredded
- 2 tablespoons dry ranch dressing mix
- 1/3-1/2 cup Buffalo sauce
- 8 ounces whipped cream cheese
- 6 ounces Greek fat free plain yogurt
- ¼ cup mozzarella cheese shredded
- ¼ cup cheddar cheese shredded
- ½ cup celery finely chopped
- 30 mini fillo shells 2 boxes
- blue cheese crumbles
Instructions
- Heat oven to 350 degrees.
- In a large bowl, combine chicken, ranch dressing mix, sauce, cream cheese, yogurt, cheddar, mozzarella and chopped celery.
- Fill each fillo shell with about 1 teaspoon of the buffalo dip mix. Place on a baking sheet.
- Bake for 15 minutes or until shells are golden brown.
- Garnish with blue cheese crumbles.
