Cajun Boiled Peanuts via Smokin' On Smith

We love some boiled peanuts, especially on holiday weekends. Not only are the great for taking on the boat, they are fabulous for serving on the dock or in the water as well! It’s an added  plus we get to support a local Alabama business, Alabama Peanut Co.

Ingredients:
  • 3 - 4 lbs of raw peanuts 
  • 2 lemons (halved)
  • 4-5 jalapenos
  • 5 garlic cloves
  • 3 tbls of Cayenne Pepper
  • 1 1/2 cups of salt  {to start}
  • Hot Sauce as desired
  • 2 Bay Leaves 
Directions:

Rinse off your peanuts well, followed by completely submerging them in water. Next, add all the ingredients. Bring to a boiling roll, then lower for 4-6 hours. Stir at least once an hour until done. Begin testing around hour 5, adding salt, cayenne, or hot sauce as desired. 

Let your batch sit in the water as you serve "samples" for a while. Finally, using a gallon ziplock, preserve for your boat ride on beautiful Smith Lake.


PS: these are best cooked in a 5 gallon propane cooker.
